I know that strawberry season is pretty much over, but this is a good refreshing dessert for the hot summer days! Actually, it takes frozen strawberries, so you can make it anytime of the year. I do not know where this recipe originated, but it is something that my mom made when I was a little girl. It makes an 9x13 pan full of yummy frozen strawberry dessert!
Strawberry Yum Yum
1 cup flour
1/2 cup butter
1/4 cup brown sugar
1/2 cup nuts ( you can let these out)
2 egg whites
1 cup sugar
2 teaspoons lemon juice
1-12oz. frozen strawberries, partially thawed
1 pkg. topping mix made according to package directions or
2 cups whipped topping
Directions-
Mix the first 4 ingredients until crumbly and pat into an 8x8 pan. Bake 350 degrees for 20-25 minutes. Cool and crumble in 9x13 pan, saving half of them (or a little less) to put on top.
Combine egg whites, lemon juice, sugar, and partially thawed strawberries. Beat 15-20 minutes.
Fold in whipped topping,
Put half of crumbs in pan. Spread strawberry mixture over and put crumbs on top. Freeze.
