Feb. Freezer Meals

My sister and I completed our freezer meal cooking this week.  This time we did it in two sessions instead of one big day.  We also had an extra pair of hands to help peel potatoes and wash dishes.  She saved us considerable time.  So if you are interested in freezer cooking, grab a friend (or sister) whose family is about the same size as yours and cook away!

This is the 2nd of several posts.  So keep watching for more freezer meals!  Keep in mind that my  meals are for a family of five.

Here some of what we made the first session-


                                                                   Lasagna
We usually freeze Lasagna in Rubbermaid Take Alongs.  But that is plenty for us, so I bought Ziploc 2 pk containers.  This should not leave so much leftover. 

Recipe-
1 lb hamburger browned
1 1/2 jars spaghetti sauce
enough water to rinse jars
2 eggs
1/2 cup Parmesan cheese
2 cups Mozzarella cheese
16 oz cottage cheese
approx. 1/2 box lasagna noodles
Mix hamburger and sauce.  Then layer sauce mixture on bottom of container.  Place a layer of noodles.  Mix together cheeses and eggs and put on top of noodles.  Place another layer of noodles.  Pour more sauce on top and sprinkle with reserved mozzarella cheese or Parmesan cheese.

NOTE: We made 4 times this recipe.  I like only 2 layers of noodles and one layer of cheese with sauce on top and bottom.  My sister likes 3 layers of noodles, and 2 layers of cheese, with sauce between each layer.  The 3 layer way makes 4 9x13 pans.  The 2 layer way makes 7 6x11 pans.  Any questions-just ask.

If you are not familiar with freezer cooking, it is a way to save time in the kitchen.  We take good recipes and make multiple times to divide into containers.  Then put them in the freezer to get out and bake later.  No mess, no long hours everyday in the kitchen.  Sit back and relax over supper hour!!
