Thanksgiving Recipes
Yesterday, I posted my Thanksgiving menu. Today I will share the recipes.
Turkey and Filling
12c toasted bread cubes (one large bag of bread does 1 gallon bread cubes)
4 cups herb-seasoned bread cubes
1 cup melted margarine
2 cups chopped celery
1 1/2 cups chopped onion
parsley
Pour margarine, celery, onion and parsley over bread cubes.
Add:
1 teaspoon poultry seasoning
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 beaten eggs
Pour 2 1/2-4 cups turkey or chicken broth over everything. Mix until it is moistened.
Layer bread mixture with 3-4 cups cooked, chopped turkey.
Bake 1-2 hours. Makes 5 quarts.

Sweet Potato Casserole
3 cups mashed sweet potatoes
1/2 cup brown sugar
1 stick butter
2 eggs
1 teaspoon vanilla
Mix well. Pour into 2 quart baking dish.
Topping:
1 cup brown sugar (may use only 1/2 cup with good results)
1/2 cup flour
1/4 cup butter
Mix with fork and sprinkle on top sweet potato mixture.
Bake 30 minutes at 350 degrees. Serves 6-8.
frugalpal note: my family prefers marshmallows instead of the topping.
Mock Cranberry Salad or Applesauce Deluxe
1 (3oz) pkg raspberry or cherry jello
1 cup boiling water
1-1 1/2 cups applesauce
1 teaspoon lemon juice (opt.)
Dissolve jello in boiling water. Blend in applesauce and lemon juice. Pour into mold or serving dish. May be used as a dessert, salad, or relish. Serve with your favorite turkey dinner. Serving Suggestion: Pour into ring mold. When ready to serve, unmold on plate and fill center with cottage cheese.

Bread Sticks
1/2 cup warm water
1/2 cup milk
1 teaspoon salt
1 teaspoon sugar
1 tablespoon yeast
1 tablespoon yeast
1 tablespoon oil
2 1/4 cups flour
Mix all ingredients. Knead 10 minutes. Melt 1/2 stick of butter each in bottom of two 9x13 pans.
Divide dough in half. Roll 1/2 of dough into rectangular shape about 10 inches long. Using a pizza cutter, cut into 1 inch strips. Put in 9x13 pan. Let raise. Top with garlic salt, parmesan cheese, and oregano. Bake 350 degrees until golden.
Tip: Spray dough strips with vegetable spray to make the seasonings stick.
