April Freezer Meals Part 3

This is Part Three in the April Series of Freezer Cooking that my other sister and I did.  We made a total of 80 meals together that should last us for 6-8 weeks.  Freezer Cooking is a very helpful way to save time in the kitchen.  If you are unfamiliar with Freezer Cooking, you can read more about it by clicking the Freezer Cooking link.  We have been doing this for several years. 

Here is some more of the recipes.

                                                             Pulled Pork Sandwiches

Ingredients:
4 lb. boneless pork loin (may use boneless chuck roast)
3 tablespoons oil
2 large onions
1 cup ketchup
1 cup beef broth
2/3 cup chili sauce (found in the condiment aisle)
1/4 cup cider vinegar
1/4 cup brown sugar
3 tablespoons worcestershire sauce
2 tablespoons mustard
2 tablespoons molasses
2 tablespoons lemon juice
1/4 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 tablespoon liquid smoke

Singe pork and set aside.  Saute onion in oil and add rest of ingredients.  Simmer sauce for 15 minutes. 



Bake roast in sauce for 2 hours at 325 degrees. 

Turn meat over and bake 2 more hours. 

Shred meat and mix well.  Serve on buns.

We did 3 times the recipe.  This made approximately 5 meals of 1 quart each.

Meatballs
1 1/2 lbs. hamburger
1 1/2 teaspoons salt
3 tablespoons onion
3/4 cup oatmeal
1 cup milk
Mix all ingredients well.  Shape into balls.

I did this recipe 7 times and got 7 meals of about 11 meat balls.  I am feeding a family of 5. 

I like to freeze these on a tray and then put in gallon bags.  You can take out as many as needed.

I use this sauce when baking-
3/4 cup ketchup
3/4 cup brown sugar
 Liquid Smoke to taste

Macaroni and Cheese
1 1/2 cups macaroni
2 tablespoons melted butter
1 teaspoon salt
1 1/4 cups Velveeta like cheese
4 cups milk

I did 6 times the recipe for 6 meals.  I put everything except the milk in a quart bag.  Works very well.
