I tried these one time! Let me know what you think! It is a different way to make those many zucchinis from the garden.
Cheese Zucchini Strips
1/3 cup cornflake crumbs
2 tablespoons Parmesan cheese
1/2 teaspoon seasoned salt
dash garlic powder
4 small unpeeled zucchini cut in 1/2" strips.
1/4 cup melted butter
Combine cornflakes, cheese, salt, and garlic powder in bag. Dip strips in butter and shake in bag. Bake 375 degrees for 10 minutes or until crisp.

I made these for supper tonight - they were a hit! Yummy!
Oh, yes. I forgot to add that I didn't have cornflakes on hand so I used Panko bread crumbs. They worked just fine!
I mde these for supper too! I also substituted bread crumbs! I thought maybe the bread crumbs weren't quite as crispy as cornflake crumbs would be.
I made these for supper last night. I didn't have cornflakes, so I used half and half of crushed rice crispies and bisquick. Then I decided instead of butter to spray them with olive oil. Viola! A whole new recipe! Anyhow, the ones who like zucchini said to definitely make them again.
