Baked Oatmeal
My kids never cared much for oatmeal even though I tried to make it often. But after Kyle spent the night at a friend's house he came home saying he ate oatmeal and it was good. Checking into it I found that it was Baked Oatmeal. So I made it this morning and everyone except Abby gave it thumbs up!
Here is the recipe:
Baked Oatmeal
1/2 c. melted butter
1 c. brown sugar
2 eggs beaten
Cream together. Then add
3 c. quick oats
2 tsp. baking powder
1 tsp. salt
1 c. milk
Put in a 9X13 pan. Bake at 350 degrees for 20 to 30 min.
Variation: You can add raisins or I added frozen blueberries. I think just about any fruit would work.
My older sister makes hers in the microwave.
Combine melted butter, 2/3 c. brown sugar and eggs. ( you can omit eggs). Add remaining ingredients using only 1/2 c. milk. Microwave for 6 to 7 min. Stir several times.

I like to do steel cut oats in the crockpot. If I make a crockpot full then we have breakfast for a few days. Just reheat in the microwave.
