On Wednesday, I served a hot lunch at my children's school. And I wanted to tell you a delicious way to make a large amount of peas. It is really simple and quite tasty.
I have a little booklet called "Cooking For Crowds." It has different large amount recipes and tips for serving wedding meals. This is the directions for making large quantities of peas.
Put 8 qt. peas in kettle. Just before cooking add 2 1/2 tablespoon salt and 1 teaspoon soda. Pour 1 quart boiling water over peas. Put peas on burners pre-heated on high. Keep lids off kettles, stir gently and frequently. Do not boil rapidly. Boil approx. 2 min., time may vary for older peas. Remove from heat, add 1/2-1 cup of butter. Let sit 10 min. Thawed peas take 30-40 minutes preparation time. Sixty lbs. peas make 32 dishes with 6 cups each.
