More Feb. Freezer Meals

Here is another post on the freezer meals that my sister and I did.  We periodically do freezer cooking to save time in the kitchen.  We have been doing this for several years now and it is something that we feel takes the stress out of meal making.  Some people do once a month cooking.  But I like my food to last a little longer than that.  I encourage you to give it a try!

                                               Hamloaf
1 lb ground ham
1 1/2 lbs. ground pork
1 cup milk
1 cup bread cubes
2 eggs
salt and pepper, if desired
Mix meats, milk, crumbs, eggs, and seasonings.  Shape into loaves. 

Topping-
1 cup brown sugar
1/4 cup vinegar
1 tsp mustard
1/4 cup water
Heat sugar, vinegar, water, and mustard.  Pour over loaves and baste with juice occasionally.  Bake at 350 degrees for 1 hour or until done.

We made four times the recipe for the meat mixture and six times for the topping mixture.    I got 6 meals to feed 5 people. 

                      I froze the topping in separate containers. 


                                 Broccoli and Cheese Soup

2 tablespoons finely chopped onion
2 tablespoons butter or margarine
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup shredded American cheese
(we used Velveeta cheese)
2 chicken bouillon cubes
1 1/2 cups water
10 oz pkg frozen chopped broccoli
In a large saucepan cook onion in butter until tender.  Stir in flour, salt and pepper.  Add milk all at once, cook until thickened, stirring constantly.  Add cheese; stir until blended.  Remove from heat.  In medium saucepan, dissolve bouillon cubes in water and bring to boil.  Add broccoli and cook until tender.  Do not drain.  Add to cheese mixture.  Stir until blended.  Makes 5 cups.

We made 6 times the recipe.  I froze it in 4  9x13 Take Along containers.

It actually does not take that much longer to do multiples of recipes.  If you are short on time, every evening do 4 times your recipe.  You will have one for that meal plus three more!!  Remember, a little extra time to save alot more time!
