Scrumpious Lemon Bars!

Lemon Bars is one of my family's favorites.  But it is also something that I don't make very often.  We have 5 boys in our family and usually it is one of the boys who makes it.  There is a variety of recipes available for Lemon Bars, but we have found the best one from Taste of Home, 2001 Annual Recipes.  I used to get the hardback book in the mail instead of the magazine.  Now when we want something special, we can look through them.  

This recipe calls for a sour cream topping which is really good and  does not have a very strong lemon flavor like some of the recipes.   I did not have any sour cream, so we ate it without and it was still very good.  

We also like extra goop, so we usually double the filling. 

 Here is the recipe-

Shortbread Lemon Bars

1 1/2 cups flour
1/2 cup confectioners' sugar
1 teaspoon grated lemon peel (I don't put this in)
1 teaspoon grated orange peel (I don't put this in)
3/4 cup butter or margarine

FILLING-(we double this)
4 eggs
2 cups sugar
1/2 cup lemon juice
1/4 cup flour
2 teaspoons each grated lemon peel and orange peel (again, I don't put this in)
1 teaspoon baking powder

TOPPING-
2 cups (16 oz)sour cream
1/3 cup sugar
1/2 teaspoon vanilla

By the way, did that picture at the top look familiar to you?  For some reason the middle of the pan is better than the edge!

I will have to try that recipe. We like lemon bars here too. and yup! The middle is always better. i could never figure out why someone would buy those brownie pans with all of those edges so that everyone could get the outside.
