This recipe came from my sister-in-law. It is quite simple and tasty. My other sister says it is like Shepherd's Pie without the veggies on the bottom. That suits my family just fine. We prefer our veggies on the side, especially peas.
HAMBURGER MASHED POTATO CASSEROLE
2 lbs hamburger, browned and drained
6 cups mashed potatoes with a little butter and milk added to make them fluffy
2 cans cream of chicken soup
Spread burger in the bottom of a 9x13 pan. Top with cream of chicken soup. Evenly spread mashed potatoes over the soup and bake 20 min at 350 degrees. Sprinkle with cheddar cheese and bake an additional 10 minutes or until cheese is melted.
This should freeze very well.
